Tomato Baskets Recipe
Healthy and filling lunch or light summer dinner recipe, tomatoes are high in alpha lipoic acid and make the perfect base for different salad fillings.

Ingredients:
- 1 can albacore tuna in water, drained
- 1/2-1 tablespoon Greek yogurt
- 2 large, ripe tomatoes, chilled
- 2 tablespoons sweet onion, chopped finely
- 2 tablespoons fresh basil, chopped finely
- Salt and pepper, to taste
Directions:
- Slice each tomato into wedges without cutting through the bottoms, creating a cup or basket.
- Remove seeds from tomatoes to create space.
- In a small bowl, mix tuna, yogurt, onion, basil, salt and pepper.
- Stuff tomato baskets with tuna mixture.
- Serve.
